A dough conditioning apparatus for frozen dough including: an enclosure (3); at least one tray (1) or conveyance for supporting at least one frozen dough piece (50) within the enclosure (3); a means (6,7) to direct a conditioning gas directly onto frozen dough within the enclosure (3); humidity and temperature sensors (10,11) for respectively measuring the humidity and temperature of the conditioning gas; and a gas controller (114) wherein the gas controller controls the duration of the conditioning gas supply onto the frozen dough according to the output of the humidity and temperature sensor.
